Recipe: Bolus cake
Is the weather keeping you indoors, is it bake-a-cake weather? Nothing can top a Zeeland cake, a bolus cake. So simple, and so so lekker! You’ll need some patience, and a special baking tin, known as a Zeeuwse knoop bakblik, shaped like a Zeeland button
Ingredients
- 175 grams dates (pitted)
- 300 ml water
- 60 grams butter
- 175 grams white caster sugar
- 2 eggs
- 175 grams self-rising flour
- 4 boluses
- Caramel sauce
Preparation
Pre-heat the oven to 180°C. Slice the dates finely, and just cover them in water in a pan. Bring them quickly to the boil, to soften. Remove from the pan and drain over a sieve. Beat the caster sugar into the butter, until light and airy. Add the eggs, one by one. Spoon in the flour to make a mix, and stir the pieces of date through it.
Grease the baking tin with butter, and pour in half the mixture. Bake in the oven for 20 minutes. Meanwhile, chop the boluses into small squares of 5 millimetres. Remove the baking tin from the oven. Sprinkle the bolus bits over the baked mixture, cover it with caramel sauce and then add the remaining doughy mixture. Bake for 30 minutes.
